Try a new spin on an old classic. Swap out the mayo for a healthier alternative, avocados!
- 2 hard boiled eggs
- 1/2 avocado
- 1 teaspoon finely diced jalapeno peppers (or more to taste)
- 1/2 teaspoon lime juice
- salt & pepper to taste
- Peel and halve the eggs and spoon their yolks into a small bowl.
- Mash the yolks with the avocado, jalapenos and lime juice; add salt and pepper to taste.
- Refill egg white halves with yolk mixture, and enjoy!
