When you’re feeling all plugged up, this tea is simple to make and warms the body. It defends against colds while invigorating digestion and metabolism. It also works as an anti-inflammatory so it’s great for all those aches and pains.
Thinly slice fresh ginger root and add to a quart of boiling water. Let simmer for 10-20 minutes. You can drink it right away if you like it strong or set aside in a glass container in your refrigerator. Keep the root slices in the container. When you are ready to use, heat a half cup of the tea mixed with a half cup of water.
If you prefer it sweet, add a teaspoon of honey or maple syrup.
For a healthy savoury flavour replace the honey with sliced scallions. (Scallions are a close relative of garlic and have similar properties and antiviral chemicals.)
